1. Introduction
There is a need to scale the relative allergenicity of foods and proteins and the hazards or risks arising from this allergenicity. image This includes proteins which pose a known risk to the public and novel proteins arising from biotechnology, modified species or new food sources. Prioritisation according to the public health impact of allergenic foods ensures that scarce resources are allocated in such a way that they address those allergens that matter most from a public health point of view. Both regulators and risk managers in general need to decide whether a food allergen is of such public health importance that it must be actively managed. Objective criteria would improve transparency and trust in the decision-making process and its conclusions.
